The Truffles & Wine Festival
Trentham: 2nd – 3rd July, 2011.
The 2nd Victorian Truffle Festival will combine the region’s most suitable wines with a unique truffle experience, including truffle cooking demonstrations, truffle and wine tasting sessions with some of Australia’s experts on how to grow and produce truffles.
Learn more about the crème’ de la crème’ of truffles, the white Italian magnatum, now being grown in Australia. “How to grow truffles in your back yard”, “How to cook with truffles” are some of the more popular talks. Along with a play-act by the Macedon Players of the ‘secretive’ way the French truffle market works.
A video on how to cook with truffle will be launched, as well as a 2nd edition of the Australian Truffle Cookbook with 100 recipes based on Australian foodstuffs and wines, featuring recipe matching selections of the region’s wines.
Truffle hunting by pigs and dogs will be featured this year, Field Days and visits to local trufferie (about 40 in the DMR region).

The VTF 2011 Program will include:
Dr Nicholas Malajczuk, ‘foremost Australian truffle scientist and one of the founders of the successful Wine & Truffle Company, will be the keynote speaker. He will be talking about growing the white Italian ‘magnatum’ truffle, the creme de la creme of truffles, in Australia. As well as on how to improve production of the truffles generally in new and/or
existing trufferie.
Colin Carter : one of Victoria’s foremost truffles scientist, owns Trufficulture, a nursery specialising in oak trees inoculated (infected) with truffle spores, has been in the nursery game some 30 years. Colin will be speaking on how to grow truffles in Victoria.
Peter Brown : The designer of the SWEP truffles soil, now on his own with improvements. He will talk about
soil tests specifically for truffles. Simon Rickard : head gardener at Annie Smithers, was head gardener of the Diggers club. Also a historical bassoonist. His talk on “How to grow truffles in your back yard” was one of the most popular last year.
A Melbourne French Celebrity Chef, who immediately volunteered for VFT 2011 when he tasted how good local, ‘real truffle oil’ was.
Christian Reuther : European trained chef, runs two food businesses in Daylesford, will talk on how to
‘How to cook truffles at home’
Local wine connoussier with talk about “How to match wines with truffle dishes”
Chris Macquet : ‘Marketing of truffles in ANZ : past and future’ as well as some European success stories.
Chris has many years experience in supply chain planning in primary industries. At Truffleberry Farms, he focuses on the marketing of truffles with Justin, his son, on the growing side of the truffles supply chain.
